1 1/2 cup oats
1 cup pitted dates
1/2 cup almond meal
1/2 cup cranberries ( or dried apricots )
1/2 cup shredded unsweetened coconut
1/2 cup dairy free chocolate chips (optional )
1/2 cup macadamia nuts
1/2 cup goji berries (optional)
1/2 cup pumpkin seeds (pepitas)
1 banana
1 tsp vanilla

Directions:
Directions:
Preheat oven to 350°
Add all ingredients to food processor and pulse until mixture sticks together
Make into balls ( makes 16 golf ball size )
Place on a parchment paper lined cookie sheet
Press cookies flat with another piece of parchment
Bake for 15 - 25 minutes ( 15 if you like soft, 25 if you like a little crunch )
