1 lb. butter
2 lg onions (chopped)
1 lg bundle of celery (chopped)
6 eggs
1 loaf white bread
1 jar HOT pepper rings (sliced pepperoncini's, roughly chopped)
1 bunch CURLY parsley (chopped)
salt/pepper

Allow bread to become a bit stale by leaving out on baking sheets overnight or toasting in oven a few mins at 300º.
Melt butter in large skillet. Cook onion & celery til softened (about 10-15 mins). Allow to cool a bit. Add beaten eggs, s/p, paprika, parsley & peppers. Add a few drizzles of water to a handful of bread at a time, squeeze out excess water and pull bread apart. Add moisten bread to skillet (no heat) and stir to combine.
Place stuffing mixture into a PAM sprayed caserole dish. Add a sprinkle of paprika to the top for color.

Bake(covered w/foil) at 350º for 35 mins.
