1@ cup butter, softened
1 and 1/2 cups brown sugar, packed
2 eggs
1 cup pumpkin
1 tsp vanilla
1 tsp grated lemon peel
1 tsp lemon juice
2 and 1/2 cups floup
3 tsp baking powder
1 tsp salt
1 and 1/2 tsp pumpkin spice
1/4 tsp ginger
1 cup chopped walnuts

Preheat oven to 375ºF.

Cream butter and sugar until fluffy. Beat in eggs one at a time. Stir in pumpkin, vanilla, lemon peel, and juice. Add baking powder, salt, spices, and flour; blend into butter mixture. Stir in walnuts. Drop by tablespoonfuls onto greased baking sheet 2 inches apart.

Bake 12 to 14 minutes.

Frost if desired.
