2 eggs
2/3 c. peanut, canola or safflower oil
2 T fresh lemon juice
1 tsp lemon extract
1 tsp grated lemon rind
2/3 c. fructose or sugar
1 c. whole wheat pastry flour
1 c. unbleached white flour
2 tsp baking powder
½ tsp salt

Beat eggs with a fork until slightly blended. Stir in oil, lemon juice, lemon extract and lemon rind. Blend in sugar until mixture thickens. Sift together dry ingredients and stir into lemon/sugar mixture. Drop by teaspoonful about 2 inches apart on ungreased cookie sheet. Flatten with oiled bottom of glass dipped in sugar. Bake at 400°or 8 to 10 minutes or until delicate brown. Remove immediately from cookie sheet. Makes about 3 dozen.

These cookies are an old favorite from my childhood. And since they are made with oil instead of butter they are lower fat than most cookies.
