1 egg
1 c. butter
1 1/3 c. brown sugar
1/3 c. pure maple syrup
3 c. whole wheat pastry flour (or 2 c. whole wheat pastry & 1 c. unbleached white)
2 ½ tsp baking soda
¾ tsp salt
1 T vanilla
1 pkg chocolate chips
½ c. walnuts or pecans, chopped

Cream butter and sugar until fluffy. Beat in egg. Add dry ingredients, then drop by teaspoonful on a greased cookie sheet. Bake at 350° for 8 to 10 minutes. Cool 1 to 2 minutes, remove from cookie sheet. For chewy cookies, remove from oven when light golden brown but barely set.

Soft and chewy – the perfect cookie. Double the recipe and freeze ahead for ready to bake cookies with no mess. Simply lay a 24 inch long sheet of Saran Wrap on top of an equally long sheet of wax paper. Drop cookies dough in a long strip on long side of paper and roll up in a long tube. Twist the ends closed an freeze. To bank: Slice in ½ inch slices and bake on cookie sheet as directed.
