Dough
3 cups flour
1/4 cup sugar
1/4 cup canola oil
4 eggs
1/4 cup warm water
touch of lemon

Filling
2 cups long grain rice (cooked)
250 grams ricotta cheese
1/2 cup sugar
1 lemon rind
1/2 tsp salt
2 tbsp vanilla extract or Strega Liquor
5 eggs

Directions:
Directions:
In a large bowl put the dry ingredients. Add the oil and eggs and mix until bound into a ball. If mixture is too dry, use the warm water to make a smooth dough. Knead lightly. Wrap with plastic and refrigerate for at least one hour.

In another bowl combine all the filling ingredients and mix lightly until smooth.

Roll out dough until 1/8 inch thick and line the dough in a 8 inch spring form pan overflowing enough to cover the top. Pour filling into the dough and cover with overflowing dough.

Cook for 30 - 45 minutes at 350ºF
