3 medium potatoes
1 tbsp olive oil
2 cups flour
1/2 cup boiled water
pinch of salt

Directions:
Directions:
Cook the potatoes in salted boiling water for about 15 minutes. Drain well. Mash the potatoes. Place all ingredients into the stand mixer. Blend and knead for about 5 minutes.
Take the dough to a flat surface and roll out dough to about 1/4 inch thick. cut into strips and form with a roll on a finger of fork. You can also use special gnocchi machine to form the pasta.

You can freeze at this point or boil in a large pasta pot for salt water. Cook gnocchi for 10 minutes.
