1/2 lb unsalted butter (16 tbsp) softened at room temperature
1/2 cup powdered sugare plus 1 1/2 cups more for rolling cookies
1 tsp vanilla extract
2 cups all purpose flour
1/2 tsp salt
1 cup ground almond
1/2 Tbsp of orange zest from 1 medium orange

Preheat oven 400ºF ,Line cookie sheet with parchment.
In a stand mixer fitted with whisk attachment, cream together butter, powdered sugar, and vanilla, until smooth.
Switch to paddle and add flour and salt and mix together. The dough should stick to paddle but not fingers.
Using a small ice cream scoop make balls and roll them in palm of hand to smooth. Place on baking sheet one inch apart. Bake for about 11 to 15 minutes. Remove from cookie sheet and cool.
Roll in powdered sugar while still warm and the re roll once completely cool. Makes 38 cookies.
