3 cups ground almonds
3/4 cup granulated sugar
2 tsp baking powder
1 tsp all purpose four
2 eggs
1 tsp vanilla extract
5 tsp almond extract
1/2 cup icing sugar

(2 tsp unsweetened cocoa powder if you want to make chocolate amaretti)

Preheat oven to 350ºF In a medium size bowl mix together ground almonds, sugar, baking powder, (cocoa if chocolate flavoured) and flour.

Whisk eggs and add them to almond misture along with the vanilla and almond extract. Mix with spoon until the mixture becomes a thick paste consistency.
Line tow baking sheet with parchment. Place icing sugar in a bowl. Form into one inch balls. Roll in icing sugar. Place on cookie sheet leaving space to expand as the cookies spread. Bake 10 to 15 minutes. Let cool and enjoy.

Makes about 40 cookies
Icing sugar is only for rolling the cookie. No need to flatten cookies as they spread. They store at room temperature for 2 weeks.
