3 eggs
1 c. oil
1 1/2 c. white sugar
2 c. grated zucchini
1/2 c. chopped walnuts
1/2 tsp. vanilla
2 c. flour (3 c. for bread)
1/4 tsp. salt
1/4 tsp. baking powder
2 tsp. soda
1 tsp. cinnamon

Preheat oven to 350 degrees. Mix eggs, oil and sugar. Add dry ingredients. Mix well. Add zucchini, walnuts and vanilla. For bars, pour into a greased jelly roll pan and bake 20-25 minutes. Top with cream cheese or vanilla frosting. For bread, put in small greased loaf pans (3) and bake 20-30 minutes, or large loaf pan and bake 55-60 minutes.
