Pasta Sauce

Godfather's Spaghetti Sauce

3 Tb Olive oil
1 Tb Minced garlic
1 Medium Onion, finely minced
1 Cup Strong Red Wine
1 can 28 oz Can of whole Italian tomatoes
1 6 oz Can of tomato paste
1 Tb Dried sweet basil (1/4 cup fresh basil)
1 Cup of water
Salt to taste (1tsp)
1 1/2 lbs Italian Sausage

Directions:
1. In a large pot, cook sausage and heat oil gently over low heat then remove sausage from pot.

2. Heat (low heat) oil and drippings, add the onion and cook until they are translucent and add garlic and cook. 

3. Add tomato paste and cook the paste until it carmelizes and then stir in wine and crushed whole tomatoes. Rinse tomato paste can with water and add to the pot. 

4. Add basil, salt and stir. After cooking for about 2 hours, add sausage and simmer on low heat for another 1-2 hours. Check occasionally and stir, and add water it the sauce gets too thick. 

5. During the last hours, correct the seasoning to taste then cover the pot.

This is the same recipe as the recipe from The Godfather movie when they went “to the mattress”.. the only difference is that Grandma did not use the wine. She used a teaspoon of sugar after carmelizing the tomatoes.
