2 lbs. lean ground turkey or buffalo meat
1 c. diced red onion
2 T. fresh parsley or cilantro
1 heaping T. chili powder
1 T. minced garlic
½ tsp. crushed red chili flakes OR 1 heaping T. minced jalapeno OR 1 poblano pepper, diced
1 green pepper, diced
1 red pepper, diced
2 c. chopped zucchini
28 oz. can crushed tomatoes
15 oz. can white beans
15 oz. can kidney beans
15 oz. can black beans
15 oz. can pinto beans
15 oz. can lentils or adzuki beans
1 heaping tsp. sea salt

Directions:

1. Brown ground meat in a skillet and drain.
2. Add all ingredients, except beans and salt, to a large slow cooker and mix gently but well.
3. Add beans - do not drain - and mix gently to combine.
4. Cook on high for 5 or 6 hours.
5. Stir and taste occaisionally, adjusting seasonings as needed. Add salt just before serving.
