Nanny's Leg of Lamb Recipe

leg of lamb -- shank end is best
2-3 pounds potatoes
5 carrots, peeled and chopped
1 large onion, chopped
2-3 celery stalks, chopped
Fresh thyme
salt, to taste
pepper, to taste
onion powder
garlic powder
1-2 tablespoons cornstarch

Directions:
Directions:
1. Preheat oven to 350º F.
2. Wash leg of lamb.
3. Score fat side of lamb. Season with salt, pepper, onion, and garlic
4. Layer baking dish with veggies, herbs and spices. You can also lay herbs on top of leg of lamb as well.
5. Fat side up, place lamb in baking dish.
6. Add water to pan to cover veggies.
7. Put lamb in oven. Increase heat to 450º F for 15 minutes. Reduce heat to 350º F and bake for remaining time (15 minutes per pound is a good rule to follow).
8. Remove lamb from oven. Place lamb on a dish to cool.
9. Place remaining liquid into a saucepan. You may choose to add some of the veggies in the baking pan. This will increase the overall flavor of the gravy.
10. Bring liquid to a boil. Add cornstarch to thicken the gravy as necessary.
11. Using a hand blender, puree any veggies and smooth the gravy. Serve warm.
