2 tablespoons olive oil
1 large onion, chopped
2 lbs chuck steak cut into cubes
4 - 5 potatoes, cut into 1 inch cubes
carrots, peeled and chopped
celery, chopped
5-6 garlic cloves, chopped
1 cup flour
salt to taste
pepper to taste

1 tablespoon onion powder
1 tablespoon garlic powder
2 tablespoons oregano
2 tablespoons thyme

Directions:

1. Mix flour with seasonings.
2. Coat beef cubes in seasoned flour.
3. Heat oil over medium-high heat in a 8-10 qt soup pan.
4. Brown beef cubes in pan and set aside.
5. In same pan, brown onions until translucent.
6. Add beef cubes back into pan.
7. Throw in veggies.
8. Cover meat and veggies with water and/or beef stock.
9. Bring to boil then reduce to simmer. Simmer for 60 minutes and check for doneness. Meat should be cooked and veggies should be soft.
10. Serve over egg noodles in bowls.

Eleanor Doyle, Nanny, was a wonderful cook. When Rich and I were dating, we would take her out to dinner often. During these dinners, Nanny would share her cooking secrets with me. Nothing was ever written. It was all from memory. I am so happy we both had those days with her.

She always had a special place in her heart for her Richie.
