1 cup brown sugar
½ cup butter and margarine
4 eggs
½ cup grape juice
3 tsp. soda dissolved in 3 T. buttermilk
1 pound chopped dates
4 cups pecans
1 pound candied cherries
1 pound raisins
1 pound candied pineapple
1 tsp. cinnamon
1 tsp. nutmeg
3 cups plain flour
½ tsp. salt

Directions:
Directions:
Add 1 cup flour to cut up fruits and nuts. Cream sugar and butter. Add grape juice, then milk and soda. Add egg yolks. Add all the flour and fruits. Beat egg whites, fold into mixture. Drop by teaspoons.
Bake at 300º for 20 minutes on a greased cook sheet.

Fruitcake was a popular Christmas gift in the South for many years. Southern Cooks proudly planned their fruitcakes for months, and proudly served and gave them as gifts. In the 1960's this popular fruitcake cookie appeared. It was less time consuming, and because of the egg whites, much lighter than the traditional fruitcake. This is among the well-used recipes in Lois' collection.
