1 3/4 cups dark honey
2 cups brown sugar
5 cups flour
1 Tbsp cinnamon
1 Tbsp ground cloves
1 tsp salt
1 1/2 tsp baking soda
3 eggs, well beaten
3/4 cup candied citron
1 1/2 cups chopped almonds

Directions:
Directions:
Heat honey and brown sugar in microwave or double boiler until sugar dissolves. Cool.

Sift or mix flour, cinnamon, cloves, salt, and baking soda together.

Chop or grind citron and almonds until fine.

Add the beaten eggs to the honey/sugar mixture and beat well.

Add citron and almond mixture and stir; then gradually add flour mixture, stirring until well combined.

Chill the dough several hours or overnight.

Roll out on floured surface and cut into shapes.

Bake at 325º on well-greased cookie sheet for about 15 minutes.

Ice and decorate when cool. We use a simple glaze of confectioners sugar and milk, with various food coloring and sprinkles.
