1 quart milk
1 stick butter
1 tsp salt
1/2 tsp pepper
1 cup quick grits
6-8 oz grated gruyere
1 tbsp butter
1/4 cup parmesan cheese

Directions:
Directions:
Heat milk and one stick butter over medium heat to boil, stirring constantly.

Add grits, salt, and pepper. Cook at a simmer until grits are done (a few minutes for quick grits; or up to 30 minutes if you use stone ground grits).

Remove from heat and stir in gruyere.

Transfer mixture to greased casserole dish.

Top with pats of remaining butter and sprinkle with parmesan.

Bake at 350º for 30 minutes.
