To clean the bok choi rinse under cool water, rubbing any grit from between the leaves.
If any of the ends are brown, trim them. Then cut each bok choi lengthwise or if they are large, into quarters.
Next, mince some garlic and quarter a lemon.
Add olive oil to a room temperature skillet and throw in the minced garlic and a pick of red pepper flakes.
Turn the burner to medium heat. As the oil heats up, the garlic will begin to sizzle - the moment this happens, throw in the bok choi.
Season with a little salt, then let it cook without moving until the bottom starts to brown - about 2 minutes.
Flip then cook another couple of minutes, until the green leaves are wilted and the white bottoms are beginning to soften.
Transfer everything to a plate and serve with a squeeze of fresh lemon. A little extra olive oil is nice, too.
