½ cup creamy peanut butter
¼ cup palm shortening
½ cup coconut sugar
1 egg
1 ¼ cups blanched almond flour
½ tsp salt
½ cup jelly (your choice)

Directions:
Directions:
- Preheat oven 350ºF
- Line baking sheet with parchment paper
- In a large bowl, cream peanut butter, shortening, palm sugar, and egg with a handheld mixer
- Blend until smooth
- Combine almond flour and salt
- Stir in almond flour and salt mixture
- Scoop dough using cookie scoop or tablespoon onto baking sheet
- Make a large thumbprint in the center of each cookie
- Scoop 1 tsp of jelly into thumbprint
- Bake for 8-10 minutes
- Cool completely
- Enjoy!
