1-1/4 C sugar
1/2 C butter (softened)
1 egg
4 dessert spoons soy milk
1/2 tsp + a dash more baking soda
1/4 tsp salt
1 tsp vanilla extract
Flour to make dough that can be handled (About 2-1/2 C)
Jelly that you like

Directions:
Directions:
Preheat oven to 400ºF Cream butter and sugar together
Add egg, beaten
Add milk and vanilla and mix well
Sift baking soda and salt with flour
Add sugar mixture to flour mixture and mix well
Roll very thin
Cream the jelly and spread evenly over layer
Roll evenly and cut right away
DO NOT CHILL
Place on greased cookie sheet and place on top rack of oven
Bake for about 10-15 minutes
