Cookie dough
2 1/2 cup flour
1/4 tsp salt
1 cup butter, no salt
1 cup sugar
1 large egg
1 1/2 tsp grated lemon peel
1/2 tsp vanilla

Icing
2 cups confectionary sugar
1 large egg white
1 tbsp water
Directions:
Directions:
Combine flour and salt
Beat butter and sugar until light and fluffy
Beat egg and lemon peel into butter mixture, add vanilla gradually
Add in flour and salt mixture

Wrap and refrigerate overnight

Preheat over to 350º
Grease cookie sheets
Divide dough into quarters
Between 2 sheets of wax paper, roll 1/4 of dough into 1/2" thick dough
Cut into whatever shape you like
Keep rest in fridge until you are ready for next quarter
Bake 5-9 minutes until edges are golden


Beat icing until thick, approximately 3-5 minutes
Decorate the cookies!
