Filling

3 cups fresh strawberries chopped
3/4 cup sugar
1 tbsp pure maple syrup
2 tbsp lemon juice
1/2 tsp pumpkin pie spice
2 heaping tbsp cornstarch

Cookie batter

2 c flour
1 tsp baking powder
1/2 tsp salt
1/2 cup soft vegan butter
1 cup sugar
1 tsp vanilla extract
1/3 cup oat milk or plant based milk of choice
optional: 1 tsp butter flavor extract (watkins brand is vegan)

Royal icing

1 cup powdered sugar
1 tbsp plant based milk
1 tsp vanilla extract
chopped dried fruit of choice for garnish (I used cranberries) about 2 tsp

Strawberry Filling

Make your filling by placing all the ingredients in a sauce pan.Cook on med heat while continually stirring and mashing the strawberries (you can use a potato masher for this or large spoon) Cook approx 15 min or until strawberries are very soft. Remove from heat ,Place a sieve or fine meshed strainer over a large bowl.Pour the mixture into the sieve and or fine meshed strainer,Press the mixture through.There will be pulp and strawberry chunks left.In your bowl you want a jelly like texture no lumps.Keep pressing through the sieve or strainer until no more can be pressed through.Cover the bowl with plastic wrap and put in freezer to set.

Cookie dough
In a bowl whisk the flour,baking powder and salt and set aside.In a stand mixer or separate bowl cream the sugar ,butter and vanilla.Add the oat milk, butter flavored extract and flour mixture.Mix until flour is well incorporated and a nice dough ball is formed.It will be slightly sticky.Flour a hard surface and roll the dough into a nice smooth ball.Cover with plastic wrap and let sit in frig 30 min.This will help the dough roll out better when ready to cut into shapes.

Royal Icing

While dough is setting in the frig prepare the icing by whisking all ingredients together except chopped fruit of choice .Set aside until ready to frost.

Preheat oven to 325.Line a cookie sheet with a baking mat or parchment paper,Flour a large hard surface..Take dough out of frig and flour a rolling pin.Roll the dough into a large circle approx 1/4 inch thick.Use a 2 inch round cookie cutter and lightly flour it (I used one with jagged edges) or a round drinking glass to cut shapes. Cut the dough with the floured cookie cutter or glass and place on cookie sheet. Bake for 14 min, then let cool on wire racks. Bake one batch at a time.Let all batches cool before assembling.

To assemble

Take one layer of the cookies and place on a large tray.Remove jelly form freezer.Put approx.1/2 tsp of the jelly in the center of each cookie.Gently place the second layer on top.Frost the top with the icing approx 1/2 tsp.Garnish with chopped dried fruit .Store in frig or on the counter in a airtight container.
