Ingredients

2 lbs. each of ground veal & pork (family size) for larger groups use at least 3 lbs. each.
1 box of Nabisco cracker meal or very fine bread crumbs. Cracker meal is getting harder to find.
1 onion (chopped very fine)
Salt & pepper
2 eggs
¼ cup milk
Oil
Gravy (jar) I use Heinz brown gravy, Grandma Adams used a small cans of steak gravy (can’t find anymore)

Process:

Add meat, ¼ cup of bread crumbs, onion, salt/pepper and 1 egg into a bowl and mix together. Roll the meat into small meatballs.
In a small bowl combine 1 egg and ¼ cup milk, mix together, dip each meatball in the egg/milk mixture and then roll in bread crumbs lightly, set aside until all are done.
In a fry pan add oil and heat (not too high otherwise the last meatballs will get too dark. Add meatballs a few at a time until just lightly browned (do not cook until done). .(DON’T SKIP THIS STEP AND PUT INTO OVEN THINKING THEY WITH COOK, NO THEY FALL APART,
Remove each meatball when browned and put into a larger roasting pan. When all of the meatballs have been browned and added to the roaster add your gravy with just enough water to keep meatballs from burning.
Bake on low 300-350 until done (1-2 hours) If you keep the temperature low they can cook for several hours without burning just keep watching the water/gravy level. The long they cook the better they are.

Personal Notes:
As a new bride I asked Stella how to make the meatballs and she told me. However, when I made them they fell apart and looked more like meat mush. I told her about my attempt and she said "Oh, you have to fry them first, didn't I tell you that? No, grandma you left that out.
