2 egg whites
1/8 tsp. salt
3/4 c. sugar
1 tsp vanilla or 1/2 tsp almond extract
1 1/2 c. flaked coconut

Directions:
Directions:
Heat oven to 350. Grease (not oil) cookie sheets. In a medium bowl beat egg whites and salt until frothy. Gradually add in sugar, beating continuously until stiff peaks form. By hand, fold in the rest of the stuff. Drop by tsp 2 inches apart onto prepared sheets. Bake at 350 for 12-15 minutes or until lightly browned. Cool 1 minute, remove from pans.
