8 tbsp unsalted butter
2/3 cup brown sugar
1/4 cup honey
2/3 cup molasses
1 large egg
1tbsp vanilla
3 1/2 cups sifted flour
1 tsp baking soda
1/2 tsp salt
2 1/2 tbsp ground ginger
2 tbsp ground cinnamon
1/4 tsp ground cloves

Directions:

Beat butter until smooth and creamy, add brown sugar, honey and molasses and beat until combined and creamy.
Beat in egg and vanilla

Combine flour, salt soda and spices until well combined. Slowly add to butter mixture.

Divide dough in half and wrap tightly in plastic wrap and refrigerate for at least 3 hours.

Roll out chilled dough and cut into shapes. Bake on a parchment paper covered baking sheet at 350º

4"+ cookies bake for 9-10 minutes, under 4" cookies about 8
