4½ c. heavy whipping creme
1½ c. half-and-half creme
15 large egg yolks, room temperature
1½ c. sugar, divided
1 T. vanilla
¼ tsp. salt
⅓ c. brown sugar, packed

Directions:
Directions:
1. Preheat oven to 325º. In a large saucepan, heat the whipping cream and the half-and-half until bubbles form around the sides of the pan; remove from heat.
2. In a large bowl, whsk the egg yolks, 1 c. sugar, vanilla and salt until blended but not foamy. Stir in hot cream mixture, gently but thoroughly combine.
3. Place a 2 or 3 qt. casserole or retangular baking dish in a larger pan; make sure the exterior pan doesn't touch the sides of the csserole or baking dish.
4. Pour the egg mixture into the casserole. Place both pans in the middle of the oven. Pour very hot tap water into the exterior pan to within 1" of the casserole.
5. Bake until the center is just set and appears dull; about 40 to 50 minutes.
6. Remove casserole from water bath and cool on a wire rack for an hour. Refrigerate until cold.
7. Mix brown sugar and remaining sugar. Sprinkle on the top of the custard. Carmelize with a kitchen torch.
8. If caramelizing in the broiler....remove custard from fridge and let stand for 30 mins. Sprinkle with sugar mixture.
9. Broil 3 to 4 inches from heat for 2 to 3 minutes.
10. Serve immediately or refrigerate for up to an hour.

This recipe claims to be for 12 servings but that would not work for our family. If Avery's eating this, you may need to double the recipe! Also, you can make in ramekins although the cooking time will be less. You will also need to make more of the brown sugar mixture.
