Potato Salad:

2 lbs. potatoes - Russet or Yukon Gold - peeled, cut into 1" cubes, cooked in salted water and drained
½ small red onion, minced
1 large stalk celery, minced and/or 1 tsp. celery seed
¼ c. sweet pickle relish
3 hard boiled large eggs, chopped
2 T. chopped parsley
salt and pepper to taste

Dressing:
⅓ c. water
⅓ c. apple cider vinegar
⅓ c. sugar
3 large eggs, beaten well
paprika

Directions:

1. Prep all the salad ingredients. Gently mix together in a large bowl and put in fridge to chill while making the dressing.
2. In a medium saucepan or skillet, whisk together the water, vinegar and sugar. Cook over medium heat until reduced by half whisking often.
3. Whisk in the beaten eggs in a slow stream and cook, stirring often, until mixture is very thick, about the consistency of pudding. Let mixture cool about 15 mins.
4. Mix dressing into salad. Dust with paprika and chill thoroughly, at least two hours.

Mom never used store bought mayonnaise in her potoato salad. This homemade dressing lends a creamy texture and is really easy to make.
