Peppermint Bark Recipe

2 lbs. white chocolate
12 Large candy canes
½ Teaspoon peppermint oil

Use a double boiler OR use a metal bowl set over a pot of simmering water ( microwaving is not recommended)

Line an 11 X 17 cookie sheet with parchment paper, set aside.

In top of boiler, melt chocolate, stirring constantly (break chocolate into small pieces- the melting process goes faster).

With a meat tenderizer or a small hammer, pound candy canes into small pieces.

Stir pieces of candy and peppermint oil (flavoring) into melted chocolate.

Remove from heat and pour mixture onto the cookie sheet, spreading it evenly.
Chill until firm (30 minutes or overnight in refrigerator).

Break into small pieces and serve. I use a large ziplock bag and hammer it to pieces.
Do it over something (I use towels to absorb the hammering and save my countertops.
It is a great frustration reliever too!!!
