1 c. butter
1 c. sugar
3 tbsp. lemon zest
2 egg yolks
2¼ c. flour
Demerara sugar
Blueberry Jam
Directions:
Directions:
Mix butter, sugar, lemon zest and egg yolks together, mix in flour. Divide dough in ½, make 2 logs. Roll 1 log in demerara sugar and leave the other plain. Roll in plastic wrap and chill.
Slice ¼ in thick, bake 400º, 10 – 12 minutes, cool completely. Just before serving, spread 1 plain cookie with 1 tsp. jam. Top with sugared cookie.
