2½ c. flour
1¼ tsp. ground cardamom
½ tsp. salt
1½ c. butter (3 sticks)
1 c. plus 2 tbsp. sugar
2 tsp. orange zest
½ tsp. vanilla
1 egg
Raw sugar for sprinkling (demerara or turbinado)

Directions:

Cream butter until light, add sugar, cream well, add egg, orange zest and vanilla, add dry ingredients, mix well. Make 2 flat disks, wrap in plastic wrap and chill. Roll out, cut into shapes, sprinkle with raw sugar. Bake 350º, about 13 minutes. Nice crisp cookies with a crunchy sugar top.
