1 c. unsalted butter, softened
1 c. sugar
1 large egg
1 c. canned pumpkin
1/2 c. sour cream
2 c. flour
1 c. oatmeal
1 box Jello instant pudding Spiced Pumpkin*
1 TSP ground cinnamon
1 TSP baking soda
1 TSP baking powder.
1/2 TSP salt
1 TSP vanilla extract
1 c. semi-sweet chocolate chips

* If Jello spiced pumpkin pudding is not available, substitute instant vanilla pudding, plus 1 TSP of pumpkin pie spice.

1. Preheat oven to 350º.

2. Cream butter and sugar. Add egg and vanilla extract, and mix well. Stir in pumpkin and sour cream.

3. In a separate bowl sift together flour, salt, cinnamon, baking soda, and baking powder. Add to pumpkin mixture, stirring well.

4. Stir in pudding mix and oatmeal, and blend well. Stir in chocolate chips.

5. Drop rounded tablespoons onto lightly greased cookie sheets (or use parchment paper/silicone baking sheets). Bake at 350º for 12-13 minutes.

Yields about 5 dozen.

Cookies do not spread when you bake them so you can put them about an inch apart on the baking sheet.
