Beef tongue
4 cloves garlic
salt to taste
1 part oil to 2 ½ parts vinegar. (½ c oil and 1 ½ cup vinegar)

Directions:
Cook tongue in water until tender (2 1/2 - 3 hours)
Cool slightly then pull skin off. Refrigerate until cold. It cuts easier. Use a slicer to cut into very thin slices.
Marinate it with 4 cloves garlic, salt to taste, 1 part oil to 2 ½ parts vinegar. (½ c oil and 1 ½ cup vinegar)
If too vinegary, add water. Layer tongue, marinade, sprinkle salt and continue each layer until tongue is last- sprinkle with parsley on top.
Best if it marinates for 24 to 48 hours.
