2 lbs. flour
1 Tbsp salt
1 lb. potatoes ( * 1 lb potatoes = about 3 medium potatoes)
1 package yeast
1 tsp sugar to activate yeast
1½ cups water - divide between ½ from the potato water, ½ from cold water to make it lukewarm before adding yeast
small pool of corn oil ( a couple of Tablespoons as needed)

Toppings:
crushed tomatoes
grated Parmesan cheese
black pepper
dried basil
oregano
olive oil

Directions:

Mound 2 lbs flour on a board. Add 1 Tbsp salt, 1 lb potatoes.
Mix 1 package of yeast with combined water and potato water. Add to flour and mix. Add 1 cup potato water
( okay if hot) and mix. Add ½ cup more and mix. Add a small pool of olive oil and knead.
Oil a large with sides jelly roll pan or a large jelly roll stone (pan should be oven- pilot warm). Spread dough onto pan. Spoon on crushed tomatoes, some grated cheese, black pepper, dried basil, oregano and olive oil.
Put into oven to raise for 2 hours. Keep oven on "warm" w/ door ajar (use a wooden spoon). Preheat oven to 400º .
Cook approximately 20 minutes (check after 15 minutes)

This is Grandma's original recipe for her pizza bread. It is similar to a Focaccia bread. This has always been one of the favorites of her grandchildren. It's worth the time and effort to make it!
