3 eggs, slightly beaten
1 cup oil
2 cups sugar
3 tsp vanilla extract
3 cups flour, plain
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
3 tsp cinnamon
1/3 cup chopped nuts
2 cups shredded zucchini

Beat together eggs, oil, sugar and vanilla. Sift dry ingredients (flour, salt, baking soda, baking powder and cinnamon) together. Then add to the liquid mixture. Beat well. Fold in nuts and zucchini. For 2 large loaves, bake for one hour in 325 oven. For 6 small loaves, bake for 45 minutes.
