Brisket Size depending on how many people you are feeding
Onion sliced thin - enough to cover the bottom of the pan
Garlic - 4 Cloves for 1 large piece
Diet lemon line soda such as 7up or sprite
Salt
Pepper
Peeled potatoes - 3 to 5 cut in quarters

Pre heat oven to 350 degrees
Cut enough onions to line the bottom of a large roasting pan
Put brisket in pan and pour soda over meat to fill pan 1/2 way (usually abt 1/2 of 2 liter bottle)
Crush garlic cloves in garlic press and rub all over top of brisket
Cover pan with tin foil and put in pre heated oven.
Baste after 2 hours recover and put back in over.
Cook for approx. 3 hours-4 hours.. If piece is small check after 2 hours.
45 minutes before done add potatoes, baste and recover.

Take tin foil off 15 minutes before you take out of oven to brown, baste..
Meat should be soft when you insert fork-that's how you know it is done.
Take out of pan and let cool for 15 minutes.
This is when you can trim the fat from the bottom.
Brisket can be VERY fatty. I like to trim some of the fat before I cook it but
there is always fat after it is done.
Try not to slice when it is very hot as it will fall apart.
Very often I cook a day or so before I want it. I slice is and put back in the
Gravy sliced and then heat up the next day. Easy to trim more fat off the top of the
gravy when it is cold.
You can heat in oven or microwave.
Serve the gravy and onions on the side along with the potatoes.
