1 head of cauliflower cooked, drained and chopped
⅓ cup butter
⅓ cup flour
1⅓ cup of milk
⅓ cup heavy whipping cream
dash if salt
½ tsp nut meg
2½ cups jack and cheddar cheese
2 eggs separated

Directions:
Directions:
Melt butter in a large sauce pan gradually add flour, milk, cheese and heavy whipping cream stirring continuously until slightly thick making a rue. Set aside and allow to cool.

Separate egg yolks from the egg whites

Stir in egg yolks, salt and nutmeg into the the mixture and fold in cauliflower.

Whip egg whites until stiff and peak

Move Cauliflower mixture to a casserole dish and gently fold in whipped egg yolk.

Sprinkle Cheese on top

Bake at 325º for 30-35 mins

My Mom, your Grandma, used to love this recipe. It was one of the last things she taught me to make. We would make it every Easter and Thanksgiving. I am now passing it a long to you and I hope you love it as much as she did
