2 apples shredded ( about 1 cup)
1 1/4 c flour
3/4 c sugar
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp nutmeg
1 c dried cranberries
2 eggs
1/2 c oil
1/2 c sour cream
1 tsp vanilla

Mini loaf pans (6x3 in)

Directions:
Shred 2 apples and squeeze them dry. Whisk together flour, salt, baking soda, cinnamon and nutmeg in a large bowl. Add dried cranberries. Whisk 2 eggs, oil, vanilla and sour cream together in another bowl. Stir in shredded apples. Fold wet ingredients into the dry ingredients until just combined. Then divide batter into 3 buttered loaf pans. Bake at 350º until a toothpick inserted into the center comes out clean, 35-40 minutes. Let cool on a rack.
