Almond Butter Cookies Recipe

Ingredients: 1 c. finely ground, unblanched almonds (I use slivered almonds) 1 lb butter 1 1/2 c. Confectioners sugar (Powdered sugar) 2 1/2 c. sifted flour 1/8 t salt 1 t vanilla extract Current Jelly (stirred) Silver dragees
Confectioner Sugar Icing: 1 c. Confectioner sugar (Powdered sugar) 3-4 t orange juice (more or less depending on desired thickness)

Directions:1. Cream butter and almonds.
2. Add confectioners sugar, flour, salt, and vanilla. Mix thoroughly.
3. Roll dough into 1" x 8" logs. Roll logs in confectioner sugar and cover with plastic wrap Chill dough logs.
4. Preheat oven to 275º F.
5. Slice dough into thin, round cookies. Place 2" apart on ungreased cookie sheet. Bake until lightly browned.
6. While still warm, place a 1/4 t current jelly between two cookies. Cool completely
7. Frost with confectioner sugar icing. Place silver dragee in center for decoration. |

Notes: This is a recipe from Mrs. Audrey Paulet. Harry and Audrey Paulet were one of Patty and Bill Marzolf's best friends. Dad and Harry grew up together in St. Paul and attended St. Luke's grade school and St. Thomas Academy high school together. Throughout the years, they duck hunted together (with Uncle Bill Ryan, Uncle John O'Keefe, and Jim Harris) and spent time together at the Paulet and Marzolf family cabins. In later years, they purchased town homes in the same development in Woodbury, MN, allowing them to spend quality time together in their retirement years. A true friendship that lasted the test of time!
