1 cup quick oats
1 cup of butter milk or sour milk
1 cup of flour
1tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup brown sugar
1 egg, beaten
1/4 cup melted butter
1 cup frozen or fresh blueberries

Directions:
Directions:
Preheat oven to 400º. Combine oats and milk in a bowl. Let stand. Combine flour, baking powder, baking soda, salt and brown sugar. Stir well to blend. Add egg and butter to oats. Mix well. Add oat mixture all at once to dry ingredients, stir just enough to moisten all. Stir in blueberries gently. Spoon into lined muffin tins and bake for approx. 20 minutes.

Note: You can combine brown sugar and melted butter to create a crumble and place on top of muffins before baking.
