1 cup sugar
1 cup butter, softened
1 tsp. almond extract
3 cups flour
1 tsp. baking powder
1/2 tsp. salt
3/4 cup raspberry preserves
Powdered sugar for dusting

Directions:
Directions:
Cream sugar and butter, add eggs and almond extract blending well. Add dry ingredients; stir well. Chill one hour. Roll dough on floured surface (1/8 inch thickness). Cut with a 2 1/2 inch round cookie cutter, cut centers from half of the cookies.

Bake cookies at 375º for 8-10 minutes. Cool. Spread the whole cookie with the preserve. Top with the cut-out cookie. Dust with powdered sugar.
