1 t. salt
2 c. flour
4 c. Chicken stock or more
1 Rotisserie Chicken

Beat together 2 eggs and 1 t. salt in 1 c. flour a medium bowl. Mix in 1 c. flour, then roll out dough on a work surface dusted with the other cup of flour.

Roll out dough folding and rolling until most of the flour has been incorporated and dough is very thin.
Cut into 1/4" wide and 3 - 4"long strips. Toss noodles in bowl of flour.

Place noodles a little at a time, in a fine-hole strainer, and sift off loose flour into a separate bowl. Throw away that flour.

Simmer 4 c. of chicken stock in a large pot over medium-low heat. Place noodles in chicken stock and cook noodles, stirring occasionally until tender, about 10 - 15 minutes.

Cut up a whole rotisserie chicken into bite-size pieces. Place in stock pot and mix with noodles and chicken stock.



*To Make a double batch of noodles:
Reduce salt to 1 1/2 teaspoons.
Use 2 - 32 oz. cartons of Chicken stock or even a little more.

Chicken and noodles at Grandma Dot's holiday table was what we all looked forward to.
She actually would cook her chickens to make broth with celery and onions and salt, then strain off the broth, let the chicken cool. Besides the whole chicken, she would use an extra breast or two, as she preferred white meat.

Needless to say, we all loved this dish.
