Empire Cookies Recipe

FAMILY ONLY~!!!

½ lb. of butter
½ cup sugar
1 egg ( beaten )
2 cups sifted flour
red current jelly ( no seeds )

Icing
2 tbs. butter
¼ cup confectioners sugar
⅛ tsp. vanilla
milk to thin

Directions:

Cookies
Cream butter and sugar together
Add egg
Gradually add in flour.
Refrigerate the dough for 1 hour
Roll out dough to ¼ thick
Cut ( round cookie cutter )
Place even amounts of cookies on the cookie sheet
Bake 8 - 10 minutes
Remove from cookie sheet and allow to stand 1 minute
Dab one warm cookie with jelly and the press a plain cookie on top
Allow to cool

Icing
Combine all ingredients and cream together.
Add milk to thin
Ice cookies and decorate
