3 unbaked pie crusts
5 medium sized sweet potatoes
1 stick butter, cubed
1 cup sugar
1 can evaporated milk
2 eggs, slightly beaten
1 Tbsp nutmeg
1 tsp lemon extract

Directions:
Directions:
Preheat oven to 400. Wash sweet potatoes to clean skin. Boil sweet potatoes with skins on until sweet potatoes are fork tender. Drain and peel sweet potatoes. In a large mixing bowl, add sweet potatoes and butter. Mix well until butter is melted. Add sugar and evaporated milk. Add eggs and blend well using mixer. The mixer will also collect any strings from the sweet potatoes. Add nutmeg and lemon extract. Pour potato mixture in pie crusts. Bake for 30-40 minutes. Let cool for one hour to give the filling time to set.
