2 large sweet onions
2 large sweet red peppers
¼ c. olive oil
¼ c. minced garlic
2 28 oz. cans crushed tomatoes
2 8 oz. cans tomato paste
1 14¼ oz. diced tomatoes
½ c. dry red wine
¼ c. Italian seasoning
2 T. sugar
1 tsp. black pepper
2 tsp. salt
1 medium lemon

1. Finely dice the onions and red peppers. Heat olive oil in large stock pot over medium heat. Sauté onions and peppers for about 10 minutes until soft. Add garlic and cook another two or three minutes.
2. Add crushed tomatoes, diced tomatoes, tomato paste, and wine. Mix well.
3. Turn down heat to low. Add Italian seasoning, salt, pepper, and sugar. Mix well.
4. Cover the pot and cook on low for 1 hour. Taste and add seasonings as needed. Cook another 30 minutes.
5. Add juice of one lemon and incorporate well.

I make this several times throughout the year and freeze it. It is the "base" for most of my Italian red sauce cooking: spaghetti and meatballs, chicken parmesan, chicken cacciatore, meat sauce, lasagna, etc.
