2 lbs. shrimp, cleaned with tails off
1 lb. crab meat, picked over
4 c. panko bread crumbs, divided
1⅓ c. finely diced green or red pepper or combo
1½ c. finely diced onion
¾ c. chopped fresh cilantro
2 T. fish sauce
2 T. sweet chili sauce
6 eggs lightly beaten
6 garlic cloves, minced
⅓ c. olive oil, divided

1. Chop shrimp into ½ inch pieces. Combine shrimp, crabmeat, 2 c. panko, and remaining ingredients except olive oil into large bowl. Mix well. Chill thoroughly, at least 2 hours.
2. Using a ½ c. measuring cup, form shrimp and crab mixture into patties. Dredge in remaining panko,pressing to make sure crumbs adhere.
3. Heat 1 T. oil over medium heat. Add four patties and cook until browned. About 4 minutes each side. Repeat procedure with remaining oil and patties.

This is a large batch of "crab" cakes but they freeze really well. We often eat these on top of a green salad. You can also cook in the air fryer. Just spray with cooking spray. Cook at 370-375 degrees for 15 mins. turning half way through.
