Mac 'n Cheese:
1 lb. medium pasta shells, cooked 6 minutes and drained
16 oz. cottage cheese (small container)
small brick of Velveeta, cut into 1" cubes
1 ball fresh mozarella, cut into 1" cubes
½ c. shredded cheddar cheese
½ c. heavy cream, plus extra
3 T. butter, room temperature
¼ tsp. salt
¼ tsp. ground pepper
1 tsp. dry mustard
⅛ t. nutmeg
pinch of cayenne pepper

Topping:
1 sleeve Ritz crackers
4 T. melted butter

1. Heat oven to 375º. In a food processor, mix all the Mac 'n Cheese ingredients except pasta, until smooth. This will take some time and require scaping the bowl to insure everything is incorporated well.
2. Add cheese mixture to pasta and mix well. Pour into a well greased 13" x 9" baking dish or large casserole.
3. Process the Ritz crackers and butter on pulse until nicely crushed. Spread over Mac 'n Cheese.
4. Cover with foil and bake for 45 minutes. Remove foil and bake until top is golden brown, another 10 minutes.

You can really use any combo of cheeses that you like or have on hand but you must use the cottage cheese; that's the secret to this super rich Mac 'n Cheese. Have extra cream on hand as the cheese mixture should be very thick but still pourable. Depending on the consistency of the cheeses, a bit more cream is necessary to achieve this.
