2 tsp. olive oil
½ c. diced onions
½ c. diced celery
½ c. diced carrots
½ c. diced green peppers
½ c. diced red peppers
½ c. diced yellow peppers
1 T. minced garlic
3 T. all purpose flour
4. tsp. Cajun or Creole seasoning
1 tsp. salt
½ tsp. pepper, black, or cayenne, depending on taste
2 8 oz. bottles of clam juice
14½ oz. diced tomatoes, drained
16 oz. bag frozen okra, thawed and drained
2 lb. shrimp, deveined and tails removed
8 oz. lump crabmeat, picked over
1 bunch green onions for garnish, sliced diagonally

1. In large Dutch oven, heat oil on medium high. Add vegetables and cook 6-8 minutes until softened.
2. Sprinkle with flour and cook 2 minutes until the mixture is golden brown, scraping with wooden spoon constantly.
3. Stir in seasonings, clam juice, ¾ c. water, tomatoes, and okra. Turn to high and bring to a boil. Reduce heat to simmer and cook 10 minutes until vegetable are tender.
4. Add shrimp and cook 3 minutes until shrimp are nearly opaque. Add crabmeat and heat through, about a minute.
5.Serve in bowls over long grain white or brown rice. Garnish with green onions.
