3 Eggs
2 C sugar
1 C oil
2 C Peeled/Grated Zucchini
3 tsp. Vanilla
3 tsp. Cinnamon
1 tsp. Salt
1 tsp. Baking Soda
1/4 tsp. Baking Powder
3 C Self Rising Flour
1 C Nuts (Optional)

Directions:
Directions:
Mix dry ingredients in a separate bowl. Beat eggs with sugar, oil and vanilla, then add zucchini. Stir in dry ingredients then pour into two greased loaf pans. Bake at 350º for one hour. Refrigerate overnight.
