1 c.flour
1 tsp. oregano
!/2 tsp. cilantro
1/2 tsp thyme
3 T. fine ground red chili
pinch comino
1 1/2 lb. beef in 1/4 inch cubes
1 sm onion minced
2 cloves garlic mashed and minced
2 T.lard
4 cups boiling water

Directions:
Directions:
Mix flour and all the herbs and spices and place in a paper bag. Toss the meat in the bag til each is coated well. Brown the onion and garlic lightly in lard and add the floured meat. When the flour turns gloden brown add 4 c. of boiling water. Cook at a light boil until meat is tender
