1 large zucchini peeled and chopped (4 c.)
¾ c. shredded carrots
½ c. chopped onion
6 Tbsp. butter
2 ¼ c. herbed stuffing cubes
1 can cream of celery soup
½ c. sour cream
Salt and pepper to taste
Directions:
Directions:
Cook zucchini in a little water and drain
Sauté carrots and onions in 4 Tbsp. butter
Stir in soup, sour cream, and bread cubes
Mix together and carefully fold in zucchini
Pour into 1 ½ quart casserole dish
Bake 25 minutes at 350
